Keto Lady Fingers
1 cup almond flour
¼ tsp baking powder
¼ tsp salt
6 large eggs
3 tbsp sweetener (I use Monkfruit/erythritol blend)
½ tsp sugar-free vanilla extract
½ tsp vanilla extract
¼ tsp cream of tartar
Mascarpone Custard
6 egg yolks
5 tbsp powdered sweetener (I use Monkfruit/erythritol blend)
8 ounces mascarpone cheese
1 cup heavy or whipping cream
1 tsp vanilla extract
¼ cup strong coffee or expresso
2 tbsp rum or brandy (optional)
Unsweetened cocoa powder for topping
🤍Instructions
1- Prepare a baking pan (I used a quarter sheet pan) by lining with parchment paper. Preheat the oven to 350° F/ 175° C.
2- In a mixing bowl, combine the almond flour, baking powder and salt. Set aside.
3- Separate the eggs. With an electric mixer, beat the yolks and sweeteners until thick and lemon colored. Beat in the vanilla extract. Fold in the almond flour.
4- With a clean bowl and beaters, beat the egg whites and cream of tartar to firm peaks. Stir in quarters into the almond mixture. Folding carefully each time. Spread evenly into the prepared pan.
5- Bake for 25 minutes or until the top is golden brown. Let cool.
6- For the mascarpone custard, in a small mixing bowl, beat egg yolks and 2 tbsp of sweetener until thick and lemon colored.
7- Place mixture on top of a double boiler over boiling water. Reduce the heat to low. Cook for 8-10 minutes, whisking constantly. Remove from heat and transfer the mixture to a different bowl. Let it cool completely and add mascarpone cheese then whisk until fully combined.
8- In a small mixing bowl, beat heavy cream, vanilla extract, and 3 tbsp of powdered sweetener until stiff peaks form. Fold into custard mixture. Set aside.
9- For assembly, slice the lady fingers into small rectangles. Combine the rum and espresso in a small bowl. Grab your container and start by placing the lady fingers then soaking it with coffee by pouring some coffee mixture over them, then add custard. Repeat! Sift some unsweetened cocoa powder on top and place it in the fridge for at least 6 hours. Enjoy!
