Vindaloo is an Indian curry dish, which is originally from Goa, based on the Portuguese dish carne de vinha d’alhos. It is known globally in its British Indian form as a staple of curry house and Indian restaurant menus.
Method
I’ve used beef for this recipe, you can also use chicken or lamb
First grind all the below ingredients to make a marination paste
Cinnamon stick
Cardamom: 2
Cloves: 4
Whole black pepper: 1 tsp
Mustard seeds: 1 ts
Coriander powder: 1 tsp
Zeera powder: 1 tsp
Salt: 1 tbsp
Turmeric: 1 tsp
Tomato paste: 3 tbsp
Kashmiri chilli powder: 2 tbsp
Water: 1/2 cup
Marinate the meat with the paste and leave in the fridge for overnight or for an hour
Now add oil in a pan with 3 medium size chopped onions
Once golden brown then add fresh grated ginger and garlic 1 tbsp each
Fry for few mins
Add chopped tomatoes with no skin and stir for few minutes
Then add marinated meat and leave it to cook on low heat until the meat is tender
You can also cook this in pressure cooker to reduce the cooking time and it will take 15-20 mins in pressure cooker
Garnish with some chillies and serve with rice or naan
