If you like desserts that combine the taste of nuts with honey, it’s time to take on this challenge. Although the recipe may look complicated, in the end, you will find that the most challenging part is just shaping the cake properly. Once you’ve mastered that, you’re all set. And you’ll be rewarded with a sweet dessert.

Instructions:

Let’s start by preparing the filling. Whisk together the cottage cheese, ricotta and honey until smooth and refrigerate. Then we start preparing the dough. Whisk the eggs with the honey until thick and white. Gently stir in the sifted spelt flour with baking powder, cinnamon, 50 g of finely ground walnuts, milk and oil. This should make a sticky dough. Then take 2 large baking trays and a cake tin with a diameter of 20 cm. Put baking paper on both trays. On one, trace the cake tin side by side twice; on the other, trace once. We will need 3 cake sponges. Spread the dough into the pre-drawn circles and bake the sponges for 8-10 minutes in a preheated oven at 180 °C.

Let them cool after baking. Spread the cream on top of each cake base and stack them on top of each other. Sprinkle the top, which is also coated with cream, with finely chopped walnuts and place in the fridge to set for at least 2-3 hours. Then it can be cut and served.
