Chicken Yakhni Pilau uses a Yakhni (Broth) to infuse the rice with extra flavour, this is my late Grandmas recipe and I’m sure this will be enjoyed by you and your loved ones too.

Ingredients
1 whole chicken -on the bone- skin off – medium pieces
3 mugs basmati rice – approx. 750grams
5 mugs boiled kettle water
1 large onion
2 medium tomatoes
3/4 cup of oil
1.5 tbsp of salt
Yakhni
1 tbsp. coriander seeds
1 tbsp. cumin seeds
1 tbsp. fennel seeds
3 green cardamom pods
2 black cardamom pods
2 bay leaves
2 cinnamon sticks
1 teaspoon black peppercorns
1 teaspoon cloves
Masala
1 tbsp. cumin seeds
1 tbsp. coriander powder
1 tsp black peppercorns
1 tsp cloves
2 black cardamom pods
3 bay leaves
2 cinnamon sticks
1 heaped tbsp. of ginger (fresh pounded)
1 heaped tbsp. of garlic (fresh pounded)
3 bullet chilli’s – optional
