Like the idea of my protein pancakes but just don’t love the flavor of cottage cheese? I got you! These pancakes use Greek yogurt instead. They’re not quite as high in protein, but still pack a decent amount. And as usual, they contain no protein powder (or banana).

Ingredients you’ll need

  • Oats: Either old-fashioned or quick work fine. You’ll blend them up, so it doesn’t matter.
  • Vanilla Greek yogurt: It’s thicker and has more protein than regular yogurt.
  • Eggs
  • Baking powder
  • Almond extract: Optional but adds a great flavor.
  • Sprinkles: The rainbow kind!

How to make them

  • Put all ingredients except sprinkles in a blender or food processor and blend until smooth.
  • Stir in sprinkles.
  • Let batter sit to thicken while you preheat a griddle and spray it with cooking spray.
  • Pour batter onto griddle in the pancake size you like. I use a quarter-cup measuring cup and get about two pancakes with each one.
  • Flip when browned on the bottom, and cook until both sides are browned.

How much protein do these pancakes contain?

I get about 25 small pancakes from this batter, with five pancakes per serving. That makes them about 10 grams of protein per serving. It’s not as high as my Cottage Cheese Pancakes, but if you pair them with a cup of dairy or soy milk, you’ll get a total of 18 grams of protein for the meal. Not too shabby!

Can I add protein powder?

Sure. Feel free to swap in 1/4 cup protein powder for 1/4 cup of the oats. Keep in mind that if your protein powder is sweetened, the pancakes will be quite sweet. You can adjust for that by using plain yogurt or half vanilla yogurt and half plain.

Can I make these more (or less) sweet?

Yes. To make them less sweet, use half plain Greek yogurt and half vanilla Greek yogurt. To make them sweeter, feel free to add a tablespoon or two of honey or maple syrup.

Are these gluten free?

Yes, as long as the oats you use are labeled “gluten free” and you check the label on your sprinkles (most are gluten free but check the ingredient list to be sure).

  1. Combine oats, Greek yogurt, eggs, baking powder, and almond extract in a blender and blend until smooth.
  2. Stir in sprinkles and allow batter to sit and thicken, about 5 minutes.
  3. Heat griddle and spray with cooking spray.
  4. Pour batter onto griddle in the size you want. I use a quarter-cup measuring cup and get about two pancakes per measuring cup.
  5. When bubbly on top and browned on the bottom, flip and continue to cook until browned on both sides.
  6. Remove from griddle and serve.
  7. Store leftover pancakes in airtight container in the refrigerator and use within 5-7 days.
