We will need:
- 2 aubergines (approx. 700 g)
- 200 g chopped tomatoes
- 200 g smoked tofu
- 120 g hard 30% cheese
- 3 cloves garlic
- 2 tbsp olive oil
- 1 onion
- 1 tsp ground cumin
- ½ tsp ground smoked paprika
- ½ tsp ground sweet paprika
- ground black pepper to taste
- salt to taste

Instructions:
Take the aubergine, cut it lengthwise in half, and scoop out the flesh, setting the pulp aside. Brush the aubergine with 1 tbsp of olive oil and bake for 20 minutes at 180 °C.

In the meantime, sauté the finely chopped onion and crumbled tofu in the remaining oil. Dice the scooped-out aubergine flesh and add it to the pan. Sauté briefly, then add finely chopped garlic, sweet paprika, smoked paprika, and cumin, and let the spices release their aroma. Add the chopped tomatoes, season with salt and pepper, and simmer. Fill the baked aubergines with this mixture, sprinkle with coarsely grated cheese, and bake for another 15 minutes at 200 °C. Serve the aubergine garnished with herbs such as parsley and chives.
