Fitness Recipe: Tofu in Sweet and Sour Sauce

We will Need:

  • 200 g natural tofu
  • 120 g canned pineapple
  • 100 ml pineapple juice
  • 30 ml coconut amino sauce
  • 3 spring onions
  • 3 cloves of garlic
  • 2 tbsp olive oil
  • 1–2 tbsp rice vinegar
  • 1 red pepper
  • 1 onion
  • 1 tablespoon of cane sugar
  • 1 tbsp cornstarch
  • a pinch of ground chilli
  • salt to taste

Preparation:

Dry the tofu with paper towels and cut it into cubes. Then coat it in ½ tbsp cornstarch and quickly fry it in a wok with 1 tbsp oil. Then set it aside, pour 1 tbsp oil into the wok and quickly fry the bell pepper, cut into cubes and the onion, cut into crescents. Add finely chopped garlic, white part of spring onion, canned pineapple, roughly chopped green part of onion, chilli and sauté everything together.

For the sauce, mix pineapple juice with coconut amino sauce, sugar, vinegar, remaining starch and a little salt. Pour the sauce into the wok with the other ingredients, cook briefly and remove from the heat. Serve the tofu in sweet and sour sauce with rice, fresh cilantro and sesame seeds.
