Ingredients
PUMPKIN CHOCOLATE CUPCAKES
- 2 Quest Pumpkin Pie Bars
- 2 tbsp almond milk
- 1 ½ cup almond flour
- ⅓ cup zero calorie sweetener
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp pumpkin pie spice
- ¼ tsp salt
- ½ cup pumpkin puree
- ¼ cup coconut oil
- 3 eggs
1 tsp vanilla extract
Topping:
- ½ cup chocolate
- ½ tsp coconut oil
Method
- Preheat the oven to 350 F and prepare a muffin pan with 10 liners.
- Chop the Quest Bars into small pieces and place them into a microwave safe bowl, reserving ¼ of them.
- In the bowl, add the almond milk and microwave on high for 15 seconds and then stir until smooth.
- Whisk in the pumpkin puree, oil, eggs, and vanilla extract.
- In another bowl, whisk together the flour, sweetener, baking powder, baking soda, pumpkin pie spice and salt.
- Add the dry ingredients to the wet and mix until a batter forms.
- Distribute the batter between the liners and bake for 18-22 minutes. Let cool.
- Once cool, melt the chocolate and coconut oil together until smooth and spoon chocolate over the tops of each cupcake.
- Finish with remaining Pumpkin Bar pieces.
