I wasn’t ready for how good this chicken would turn out. Juicy, tender, and absolutely exploding with flavor, this might just be the best chicken recipe I’ve ever made — and it’s shockingly easy. One bite and you’ll understand why I had to double the batch. It’s sweet, savory, crispy, and melt-in-your-mouth all at once.
INGREDIENTS FOR RECIPE NO. 1 (ASADONG MANOK KAPAMPANGAN STYLE)
2.5 lbs chicken leg quarters
1 tsp black pepper
4 tbsp soy sauce
1 tbsp vinegar
1 tbsp calamansi or lemon juice
2 tbsp minced garlic
1 medium onion, chopped
2 large tomatoes
2 medium red bell peppers
2 bay leaves
4 tbsp tomato paste
3/4 cup hot water (add more if you want more sauce)
1 tsp sugar
5 tbsp chicken liver (fried and mushed) or liver spread from can
Salt and pepper to taste
1 tbsp calamansi or lemon juice
INGREDIENTS FOR RECIPE NO. 2 (CRISPY FRIED CHICKEN WINGS)
2 lbs chicken wings
3/4 tsp salt
1/2 tsp sugar
1 tsp onion powder
1/2 tsp black pepper
1 tsp paprika
4 cloves garlic, minced
1 and 3/4 tbsp soy sauce
2 tbsp cooking wine (you can use lemon juice)
1 small egg
2 tbsp rice flour
5 tbsp cornstarch
