It’s Iced Tea Season!

    One of my favorite summertime treats is iced tea. And I LOVE experimenting with different herbal blends. Lately I’ve been combining Elderflower with Hibiscus, sometimes adding Earl Grey (I know it’s black tea but I make an exception for that one), and Lavender.

    Generally speaking, I brew up my tea strong, add sweetener (if I’m going to use any) while it is still hot, and then pour it over a glass filled with ice. I imagine there are better methods. The ice will melt quickly and dilute the flavor of your tea so you need to brew it strong. If I wasn’t so impatient I’d make a full teapot ahead of time and let it cool in the refrigerator. 
    But other than that, there really are no rules. I experiment pretty freely. Lemon Balm is nice on its own but some people like it with Chamomile or Rose Hips. If you want a tea that tastes somewhat like black tea without the caffeine, you might try Blackberry Leaf. I use that in many of hot herbal blends for my personal use for exactly that purpose. Try adding Orange Peel and Cinnamon. Maybe a touch of Hibiscus for something more tart.
