Preparation:
Cut the carrot and cucumber into thin strips and season the vegetables with vinegar, salt and cane sugar. Let it rest for about an hour.

Drain the canned chicken breast, break it apart with a fork, and season with coconut amino sauce and sweet chilli sauce. Cut the baguette lengthwise (but don’t cut it completely through), spread both inner sides with mayonnaise, fill with pickled vegetables, chicken and herbs. Cut the filled baguette crosswise into 2 equal halves for easier eating and serve.
